On Thursday March 19 at 7PM, Gụ Wine Bistro will host a special evening in Da Nang: our first wine dinner with a winemaker present.
For this occasion we welcome Paul Granier, a young French winemaker from the Languedoc region, whose wines are gaining attention among sommeliers and wine lovers looking for authentic terroir driven bottles.
The evening will feature four wines paired with four dishes, prepared by our chefs to highlight the character of each cuvée.
This is not just a tasting.
It is a chance to sit at the table with the winemaker himself.

Meet Winemaker Paul Granier at Gụ Wine Bistro

Who Is Paul Granier?
Paul Granier represents a new generation of French winemakers.
Born into a family of winegrowers, he developed his passion early and later deepened his knowledge through the OIV wine master program, where he explored vineyards across more than twenty six countries.
His path then took him to Burgundy, where he spent several years working at the respected Maison Lucien Le Moine, learning the art of élevage and the complexity of great vineyard sites.
Later, he joined Laurent Charvin in Châteauneuf du Pape, refining his approach to whole cluster fermentation and long aging.
In 2022 he created his own small wine house in the Languedoc, focusing on a simple philosophy:
old vines
great terroirs
slow vinification
tiny production
Each wine is produced from specific vineyard parcels and aged patiently before release.
The result is a range of wines that combine southern Mediterranean character with Burgundian precision.

The Wines We Will Taste
During the dinner, guests will explore four wines from Paul Granier’s collection.
Les Baudes Blanc
A vibrant white wine with bright citrus aromas, herbal freshness and a subtle mineral edge.
Its lively acidity makes it an ideal companion for delicate seafood dishes and fresh Mediterranean flavors.
Les Grandes Garrigues
Produced from old vine Piquepoul planted on limestone soils in the Hérault, this wine offers depth and texture rarely seen from the grape.
Expect notes of apricot, lemon peel and wild herbs with a saline finish that reflects the Mediterranean landscape.
Two different vintages will be served during the dinner, allowing guests to experience how the same wine evolves across years.
Les Lignières Rouge
This red wine is dominated by Grenache from very old vines, grown on limestone and clay soils.
Fermented with whole clusters and aged for twenty months in demi muids, the wine shows elegant red fruit, herbs of the garrigue and a fresh, savory finish.
It is a perfect match for roasted meats and rich bistro dishes.

Four Wines, Four Dishes
For the evening, our kitchen team has created a special menu designed to complement the structure and flavors of each wine.
The idea is simple:
each dish reveals a different dimension of the wine
each wine brings new life to the dish
This is the spirit of a true wine pairing dinner.
A Rare Opportunity in Vietnam
Paul Granier produces very small quantities, often only around one thousand bottles per cuvée.
That makes evenings like this particularly special.
Instead of tasting the wines through a distributor or a shop, guests will hear the story directly from the person who made them.
